Restore To Factory Settings


hello,
mac has become extremely slow , planning on doing factory reset.

have
  1. restart mac in recovery mode (hold down command , r key during restart).
  2. chose re-install os, chose mac hdd, singed in , verified
  3. waited night , woke , saw mac logged old os.
i have done multiple times same result.
suggestions, not want alter files , not able re-install correct version eligible install.

suggestions,
in advance
 

between step 1 , 2, open disk utility , format hdd.
